Jon,
Filters work similarly to how they would in your email. You can set subject, keywords or specific users to "filter" into the different actions listed on the setting up filters page. For example, let's say you have a user [email blocked] that you know always has questions about your Product A. You can create a filter that will send all emails from [email blocked] into the category called "Product A".
