Until I integrate Tender with my email system, is there a default email address I can use to test out the email features?

You can use Command ⌘ instead of Control ^ on Mac

Each category has a unique email address, which you forward your email setup too.
If you go to the email settings and click enable, you'll see two fields. The first for your email forwarder and the second with the generated unique email for that category.
You can just use the unique email for testing purposes until the forwarder setup you want is ready.
