I have one support email for everything (support@). It would be cool if I could have a hidden category where all my email goes that isn't shown on the forum to anyone but support staff.

Support@ emails create private discussions. The use case so far has been that the "bugs" category matches your support@ category. Are you sure you still need a secret category? It means that the user can't login to view the discussion.

A hidden catchall would be nice. I think in most cases the project member is going to sort through email topics and move them into the appropriate category before dealing with the issue in the email.

Perhaps instead of per-category email address, all emails for the project would spool into a queue, then project members can view them and choose where to open them as a topic, or to just toss them in the trash (i.e. spam)

The use case for allowing multiple emails per site is having an address for bugs, and another for billing issues.

Hidden categories are probably coming, but setting that would make it harder for a user to get to their support issue. Though they'd still be able to access from the email link or a user's personal dashboard showing issues they've opened (unimplemented, but planned).
